Recipe for Cheryl's Irish Soda Bread
INGREDIENTS:

2 cups whole wheat flour
1 ½ cups white flour
½ cup bran flakes
½ tsp salt
1 tsp baking soda
½ tsp cream of tartar
¼ cup sugar
4 tbsp cold butter, cut into
small cubes
2 cups butter milk
Mix all the dry ingredients together.
Cut in butter with fingers or pastry cutter to make a coarse crumb texture.
Make a well and stir in butter milk, stir with a fork until a soft dough is formed. Mix the dough into a ball (do not over-mix).
Place in a pan, cut a cross in the top and bake for 40 minutes at 400 degrees. Best if baked in a non-convection oven.
DO NOT OVERWORK THE DOUGH, IT SHOULD BE JUST HOLDING TOGETHER WHEN PLACED IN THE PAN.
MAKE CERTAIN THE BREAD IS COOKED THOROUGHLY THROUGH. PARTIALLY COOKED BREAD WILL BE DARK WHEN CUT, AND HAVE A NASTY SOUR TASTE.
